When I read about the offenses of some of my lj friends' husbands/boyfriends, I realise anew how lucky I am to have Jake, whose bastardry is really pretty tame. I attribute this in part to my complete lack of inhibition when it comes to pointing out his minor bastardry. They're right. Communication really is key. Fortunately, he's also just an all-around swell guy.

The other night I made quesadillas for dinner, which, oddly, I had never done before. SO good. I'll make them again. And again and again, as Jake says. Tonight Jake was feeling sick/run down, so I made him Thai chicken soup for dinner. And vegan chocolate cake, although I did use milk instead of water, so it wasn't exactly vegan, as if I care. It's nice to actually prepare things to eat, instead of being hungry and wondering what to eat, and then having a peanut butter sandwich.

Mmmm, quesadillas. I love Mexican food. [livejournal.com profile] katchuri has the most wonderful recipe for tortilla filling - various veg etc. sauteed and then at the end you melt in a bit of blue cheese. Outstanding.

I love Mexican food too. I don't know why it took me this long to attempt it at home. That recipe sounds nice :)

Mmm, quesadillas.
I made and ate those pretty much every day for lunch through my second trimeter and into the third. So I was feeling pretty grossed out about them.. until now. :)

There's so much opportunity for variety in quesadillas. I mean really, you could put in ANYTHING, cover it with enough cheese, and it's just going to be wonderful.

It's true, though. They really are good. And sooo easy!
The other thing I liked to do, when I was rationing my tortillas, was to cook all the veggies, then put the tortilla in a frying pan that was too small for it, so it went all up the sides, then put the veggies and cheese in there when it was cooking/getting crispy. It was like a little mexican pizza.
